Copper Cowboy Is Bringing a $1.5 Million Western-Inspired Transformation to San Diego's Gaslamp Quarter

A historic building in downtown San Diego is getting an entirely new identity.

Copper Cowboy, a Western-inspired restaurant and entertainment concept, is planning to open in the Gaslamp Quarter in January 2027.

The project will occupy the former Coyote Ugly space inside the historic Keating Hotel at 820 Fifth Avenue.

But this isn't simply another bar opening. The approximately $1.5 million transformation is designed to combine three distinct experiences: a restaurant, a live music saloon and a custom cowboy-hat bar.

Here's what has been announced and what San Diegans can expect.

What Is Copper Cowboy?

Copper Cowboy is a restaurant, nightlife and retail concept inspired by the American West.

The development is led by restaurateur Alessandro Minutella and partners.

Minutella has been involved in other Gaslamp hospitality ventures, including Zama and AKA.

The new project aims to blend Western hospitality with contemporary dining and nightlife rather than copying the style of a traditional sports bar or nightclub.

According to reporting from San Diego Magazine and What Now San Diego, the space will contain three connected experiences.

1. A Western-Inspired American Restaurant

The restaurant will offer an elevated interpretation of American cuisine with Western influences.

Chef James Montejano is involved in developing the culinary program.

His career has included experience with notable hospitality operations such as Four Seasons, L'Auberge Del Mar, La Valencia Hotel and Michael Mina's restaurant group.

A complete menu and final pricing have not yet been announced.

The goal is to create a dining experience that works as a restaurant in its own right, not merely as a food option attached to a nightclub.

2. A Live Music Saloon With an Elevated Stage

The entertainment side of Copper Cowboy is planned as a Western-inspired saloon.

Announced features include:

  • Live country music
  • Rock performances
  • DJs
  • Line dancing
  • An elevated stage above the bar
  • Daytime food, drinks and sports viewing

The elevated performance stage is one of the project's most unusual design features.

Rather than keeping entertainment separate from the main bar experience, the plans place live performances at the center of the space.

Exact entertainment schedules have not yet been announced.

3. A Custom Cowboy Hat Bar

Perhaps the most unexpected part of the concept is Stets & Stone's Hat Bar.

The experience is planned to allow guests to personalize cowboy hats while enjoying the venue.

Copper Cowboy partner Dustin Noblitt is the owner and CEO of HatCo, the company associated with well-known hat brands including Stetson and Resistol.

That connection brings an established Western-wear component to the project.

Custom-hat pricing, personalization options and appointment requirements have not yet been publicly confirmed.

What Will Copper Cowboy Look Like?

The transformation is being designed by Tucker Sadler Architects.

San Diegans may recognize the firm's work on other high-profile projects, including the Rady Shell at Jacobs Park and Portside Pier.

The announced Copper Cowboy design features:

  • Warm wood flooring
  • Exposed brick
  • Leather seating
  • Copper ceiling details
  • Western and mountain-lodge influences
  • A live performance stage integrated into the bar

The overall direction combines elements of traditional Western design with a more polished contemporary setting.

Published architectural renderings illustrate the intended direction, but the final built interior may differ.

What's Happening to the Former Coyote Ugly Location?

The space previously housed Coyote Ugly, which opened there in 2014 and permanently closed in May 2020.

Copper Cowboy will create a new identity for the location inside the Keating Hotel.

For people familiar with downtown San Diego nightlife, the address is recognizable as part of the Gaslamp's longstanding restaurant and entertainment district.

The transformation represents a meaningful reuse of an existing hospitality space rather than an entirely new ground-up building.

When Will Copper Cowboy Open?

The project is targeting mid-January 2027, according to October 2026 reporting.

That timing is intended to align with the local winter rodeo season.

However, the exact opening date has not been confirmed, and construction and permitting schedules can change.

Prospective visitors should check the venue's official website before making plans.

Where Is Copper Cowboy Located?

Copper Cowboy is planned for:

820 Fifth Avenue
San Diego, CA 92101

The location sits within the Gaslamp Quarter in downtown San Diego.

The neighborhood is known for its historic architecture, nightlife, restaurants, hotels and pedestrian activity.

Nearby downtown destinations include Petco Park and the East Village, while the waterfront and Little Italy are elsewhere within the larger downtown area.

Why This Development Matters for Downtown San Diego

One of the most interesting things about San Diego is how older buildings continue to find new uses.

The Gaslamp Quarter has experienced many changes in its restaurant and nightlife scene over the years.

Copper Cowboy represents a substantial investment in reusing a recognizable location while introducing a concept not commonly associated with downtown San Diego.

It also reflects the increasing emphasis on restaurants and entertainment venues that offer more than a conventional meal or drink.

A custom-hat experience, live-music programming and a full-service restaurant create several different reasons to visit the same location.

Whether Copper Cowboy becomes a lasting success remains to be seen, but its planned transformation is a noteworthy example of how downtown hospitality continues to evolve.
